This Watermelon Cake Will Delight Your Summer Party Guests

The only thing that could actually give freshly sliced watermelon a run for its money during the summer season is this recipe for cake that looks like a freshly sliced watermelon. Because, well, let’s be honest — cake tops pretty much anything!

That’s precisely why this recipe from Betty Crocker is absolutely perfect for summer parties. It’s fun and festive due to the whole resembling a watermelon thing, but it’ll also satiate any sweet tooth with its yummy cake flavor.

Despite looking like a watermelon, this cake doesn’t necessarily have to taste like one. In addition to the Betty Crocker white cake mix and fluffy white frosting, the recipe does call for a dry drink mix, such as your average Kool-Aid drink mix. But instead of going with the watermelon flavor, you could always try cherry instead and really surprise your guests!

As for the frosting, flavorless food coloring gives the top layer of the dessert its fruity appearance.

Chocolate chips play double duty. They both resemble watermelon seeds (cute!) and give an added burst of chocolate flavor to the moist cake (yum!). Seriously — what could be better?

You’ll start by combining the cake mix, water, oil, egg whites and drink mix with an electric hand mixer or stand mixer before folding in the chocolate chips and pouring the batter into greased 8 or 9-inch round cake pans.

Follow the cake mix box’s baking instructions and, once the cake has baked and cooled, it’s time to really have some fun!

Separate the frosting so you can dye one portion green and one portion pink. You can do this by mixing 1 cup of frosting with 10 to 12 drops of food coloring.  Then decorate the sides of the cake with the green frosting and cover the top with the pink frosting.

Have fun with additional green sprinkles or jelly beans along the sides and chocolate chips on top to really make this cake look like a ripe, juicy watermelon.

Finally, cut the cake into watermelon triangle-shaped slices to complete the theme. Your dessert should end up looking a little something like this:
